The replaceable wire is the key feature

Wire gauge and what it means for slicing

The Monaco Plus uses a slightly thicker wire than the Milano Plus, which gives it a more solid feel and handles harder cheeses better. For soft to medium-hard cheeses (gouda, edam, jarlsberg, manchego), both work equally well. For very hard cheeses (aged parmesan, old gouda), neither wire slicer is the right tool — use a cheese knife or a dedicated hard cheese chopper. The standard Boska wire is 0.5mm, which is right for the vast majority of cheeses people eat daily.
